The Jairo Arcila Washed Bean Roasted in Lennox Head, Northern Rivers, Far North Coast, New South Wales is a meticulously cultivated coffee variety that stands out for its exceptional quality. Grown in the lush coffee-growing region of Minas Gerais, Brazil, this microlot is exclusively composed of the Caturra variety, which itself is a natural mutation of Red Bourbon.

Harvest and Selection Process: 

  1. Ripeness Criteria: The coffee cherries are harvested with utmost care, adhering to strict ripeness criteria. Only fully mature cherries are selected for processing.
  2. Floating and Hand-Sorting: After harvest, the cherries undergo a thorough floating process. This involves immersing them in water to separate the denser, high-quality beans from any defective or underripe ones. The hand-sorting step further ensures that only the best beans move forward.
  3. Underwater Fermentation: The selected cherries are then submerged in water for an impressive 30 hours of underwater fermentation. This extended period allows for the development of complex flavors and enhances the bean’s overall quality.
  4. Pulping: Following fermentation, the cherries are pulped to remove the outer skin, revealing the parchment layer that encases the coffee beans.
  5. Gentle Washing: The parchment-covered beans are gently washed to remove any remaining mucilage or impurities. This step ensures a clean and pristine surface for drying.
  6. Controlled Drying: The washed beans are carefully spread out in temperature-controlled conditions. The drying process is closely monitored to achieve the ideal moisture content. This attention to detail contributes to the bean’s consistent flavor profile.
